When you ask about two coats being enough... one coat to bond the 'glass, the second to fill the 'glass weave?
Maybe, but take a really close look before you start sanding! If you can still see 'glass weave texture anywhere, you'd best add more epoxy to fill that.
How long has it been since you last applied a coat of epoxy? Depending on brand, hardener choice and the temps it's been sitting about in, you have a smallish window when you can apply more without having to sand.
With a 'yak you don't want to just pile it on 'cause everything added also adds weight. On the bottom that's not as much a problem (it'll sit a little lower in the water) as topside (where it affects balance) so you need to be the judge as to when there's enough to leave a smooth surface to accept varnish or paint.

Hi, thank you for the reply.
After the fibreglass layer there are 2 more layers of epoxy. Last coat was applied yesterday, but I’ll have to put it away for another while cos of work commitments. It seems pretty smooth so i think it might be enough.
